sunday project: corn muffins

trying to find a use for the bag of bob’s red mill corn flour i have laying around. good for gluten free baking … but not the same as polenta or masa … hrm. so far, i’ve found recipes inspired by kim boyce.

Serves 12

Ingredients


For a heartier texture, substitute 1/4 cup cornmeal for an equal amount of corn flour. 

  • 12 Tbsp. (1 1/2 sticks) unsalted butter, plus more for greasing
  • 1 cup all-purpose flour, plus more for dusting
  • 1 1/4 cups corn flour
  • 1 Tbsp. baking powder
  • 2 tsp. kosher salt
  • 1/2 cup packed dark brown sugar
  • 2 eggs
  • 1 cup whole milk
  • 1 ear corn, grated on the side of a box grater (optional)

Active time: 25 minutes
Total time: 1 hour, 15 minutes

Kim Boyce’s Corn and Gruyere Muffins

Taken with a little adaptation fromGood to the Grain, p. 89. Makes 10 large muffins
  • 1 1/2 cups sliced green onions
  • 2 tsp cumin seed
  • 1 tbsp unsalted butter
  • sea salt and freshly ground black pepper to taste
  • 2 cups grated Gruyere cheese (about 1/3 pound)
  • 1 cup corn flour
  • 1 cup plain flour
  • 1/4 cup dark brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp kosher salt
  • 1 1/2 cups sour cream
  • 2 eggs
  • 2 ounces unsalted butter, melted and cooled slightly

350F; Bake for 32-36 minutes, or until the muffins are golden brown
